A healthy spin on favorite foods

For many people, their resolutions of the new year have to do with fitness and proper eating habits. However, this resolution can easily come crashing down if they don’t get information regarding healthy snacks. Here are several recipes that will enliven your food, give you proper nutrients and are easy to make!

Jim’s Microwave Scrambled Eggs  (serves two)




4 eggs

3 tsp milk

salt and pepper

onion, diced



Beat eggs well (in a microwaveable bowl). Add milk, salt and pepper, and stir in diced onion. Place in microwave and cook on high for two minutes. Stop and stir. Cook 1 1/2-2 minutes longer on high.

Healthy Edamame Snacks 




Shelled, frozen edamame

1 tbsp. olive oil

2 tbsp. low-sodium soy sauce




Place the frozen beans in a microwave-safe dish drizzled with oil and soy sauce. Close the lid, and shake the dish. Open one corner of the lid. Microwave for about three minutes. Make sure the beans are unthawed and not raw. Eat hot or cold.

   Microwave ‘Baked’ Apples 

(serves two)




2 medium baking apples (like golden delicious, rome, braeburn, jonagold)

 2 tsp brown sugar

1 tsp cinnamon

2 tbsp raisins or craisins (dried cranberries)

2 tsp margarine



Core apples leaving bottom intact. Place in a microwave-safe deep dish. Mix together brown sugar, cinnamon and raisins and spoon into center of apples. Top with margarine. Cover with heavy plastic wrap and microwave on high for 5 – 7 minutes or until tender. Let stand 4 – 5 minutes before serving.
